Ingredients:
- 2 Large Eggs
- 3/4 cups Sugar
- 2 cups Heavy Cream (aka Whipping Cream)
- 1 cup Milk (I use skim, but any percent should work)
- 1 can Coconut Cream (remove the top "waxy" layer)
- 1 oz (or more to taste) of dark rum or Malibu rum
- Whisk the eggs in a mixing bowl until light and fluffy (about 1-2 minutes)
- Whisk in the sugar 1/4 cup at a time, then whisk until completely blended.
- Pour in the cream and milk, mix to blend.
- Add coconut cream once you remove the "waxy" layer.
- Right before adding to the ice cream maker, add rum.
- Mix according to manufacturer's directions.
- Add any favorite toppings or eat plain.
