As you can see, I try to keep healthy things to snack on. The ranch dip is light sour cream (you could also use nonfat greek yogurt) mixed with ranch dressing mix (follow the instructions on the package).
My lettuce came from bountiful baskets, a food co-op that I love. However, it is getting warm so my lettuce started to wilt. Quick fix for wilting lettuce that is still on the stem...chop a small part of the stem off and put it in a bowl of cold water. Looks better than new!
I just made my guacamole tonight. I used to hate guacamole and avocados, now I love them (healthy oils--LOVE IT).
I drink my coconut water after my runs...Zico is the only way to go (order from Amazon, it's cheaper).
I love having fresh fruit and veggies chopped and ready to go. I will sometimes make me a fruit salad for a mid morning snack at work, or I'll take some veggies with ranch dip. On occasion, I'll take some guacamole with chips. I just bought Lay's Natural Tortilla Chips (made with organic corn, can you say NO GMO's!!) I also take my homemade granola bars to work for a mid morning snack (the recipe is listed). My lunch tomorrow is leftover BBQ chicken quinoa salad (recipe is also listed).
Brie cheese is saved for an occasional evening snack with a few Flatbread Crisps (Olive Oil with Sea Salt) with a glass of wine (white of course--riesling or moscato)
Pecans are a good snack, good to top salads (especially the summer strawberry salad--also posted here), or to top some good ice cream such as coconut rum (recipe coming soon).
I also have broccoli, portabella mushrooms, zucchini, green onions, red onions, potatoes, cilantro, various cheeses (sliced and shredded), eggs, butter (NOT margarine), milk, grape juice (for my kids), yogurt, salad dressings, carrots, cauliflower, crescent baking sheets, and that's it for the most part.
Long story just to prove one thing...keep healthy foods on hand and you will eat healthy!
