I like experimenting and making ice cream at home, so after a trip to Coldstone, I decided to try to make my own cheesecake ice cream with the help of my Ben & Jerry's ice cream book. It turned out really well, and I experimented with the toppings as well. One night, I had cherry cheesecake ice cream, and another, I had turtle cheesecake ice cream. Both were delicious!
- 2 Large Eggs
- 3/4 cup of sugar
- 2 cups heavy whipping cream
- 1 cup milk
- 1 8 oz reduced fat cream cheese
- can of cherry pie filling
- graham crackers
- chocolate and/or caramel syrup
- pecans
- Whisk the eggs until light and fluffy (1-2 minutes)
- Whisk in sugar 1/4 cup at a time, until completely blended.
- Pour in the milk and cream and mix together.
- Pour 1 cup of the mixture in a bowl with the cream cheese, and whisk until completely incorporated.
- Then pour the cheesecake mixture into the other part of the base.
- Pour into your ice cream maker and make according to manufacturers instructions.
- When it is finished, allow to sit in the freezer to set up (takes a few hours, otherwise, it is soft)
- Add your desired toppings....ENJOY!!
