Ingredients:
- 2 large avocados, mashed
- 1 lime, juice
- 1 jalapeno pepper, finely diced
- 1 romano/plum tomato, seeded and finely diced
- 1/4 cup red onion, finely diced
- 1 tablespoon cilantro, chopped
- 1/2 teaspoon cumin, toasted and ground
- salt and pepper to taste
Mix all ingredients together.
Corn Salsa (recipe can also be found here http://www.howsweeteats.com/2012/04/just-like-chipotles-corn-salsa/)
Ingredients:
- 1 12-ounce bag of frozen sweet yellow corn, defrosted and drained
- 2 medium-sized jalapenos, seeded and chopped (leave in some seeds for more heat if desired)
- 1/2 red onion, finely chopped (about 1/3 cup)
- 3/4 cup fresh cilantro, torn or chopped
- the juice of 2 (juicy!) limes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions:
Mix all ingredients together.
