Ingredients:
- 2 Russet Potatoes
- 1 Tbsp Butter
- 3-4 Tbsp. Light Sour Cream
- 3-4 Tbsp. Skim Milk
- 2 Tbsp. Ranch Dip Mix (or more depending on your taste)
- 3 Slices of Center Cut Bacon
- Shredded Monterey Cheddar Cheese
- 3 Scallions sliced
- Clean, slice, and cook potatoes until fork tender.
- Cook the bacon slices (I cook mine in the microwave on paper towels)
- When they are done, drain and put in large mixing bowl.
- Mash the potatoes with the butter. When they are mashed, add the sour cream, ranch dip mix, and milk (you make need to add more to make them creamier).
- Scoop the potatoes on your plate, and create a little well.
- In the well, add the cheese, bacon, and scallions (watch your portions).
