- ½ 16 oz bag of frozen corn
- 1 zucchini chopped (I used half circles)
- 2 green onions (chopped)
- 1 cup of sliced cherry tomatoes
- 1 Tbsp olive oil (I think coconut oil would be good too)
Directions:
- Heat olive oil in a pan over medium heat.
- Pour corn into a large bowl.
- Chop other veggies add to the corn, and mix (I just used my hands for this step).
- Add to the pan let them sit for a few minutes before you stir them so they can caramelize.
- Stir and then cook until done about 10 minutes total cooking time.
